MID-WEEK RECIPE: Quick Fix Healthy Fajitas

I have the continual problem of trying to be healthy during the week, but then living with my boyfriend who clearly doesn’t want to eat rabbit food – so most of the time I end up eating what he does, which isn’t brilliant if you’re trying to watch the pounds. But at the same time I don’t want to be cooking separate meals all the time, so I’m trying to adapt our weekday evening meals to make mine the healthier option. First up…Healthy Fajitas!

This doesn’t look much like a Fajita (as my boyfriend points out), but it has everything in a Fajita…except for the flour tortilla. To keep things quick and easy during the week, I opted for a Fajita kit and I had salad as my base with red grapes, shavings of low fat cheese, olive oil dressing, the seasoned chicken and a dollop of low fat sour cream and salsa on the side. The boyfriend had the same but with flour tortillas, instead of the salad base. It was delicious and I didn’t feel like I was missing out at all.

Serves 2

You will need:

1 Old Elpaso Fajitas kit (contains tortilla wraps, fajitas seasoning and salsa)

2 peppers (red and green)

1 onion

500g chicken breast

low fat sour cream

low fat chedder cheese

bag of mixed lettuce leaves

red grapes

olive oil

sweet chilli sauce (optional)

Cooking:

Chop the onion, cut the peppers into strips and dice the chicken. In a large wok pan heat up a good tablespoon of olive oil and add the onions and peppers, soften for 3 minutes before adding the chicken. Simmer until the chicken is browned, then add the fajita seasoning and cook for another 10/12 minutes until the chicken is cooked thoroughly.

Meanwhile, prepare the salad by emptying out roughly half a bag of mixed lettuce leaves on to a plate. Roughly chop and add a handful of grapes, some shavings of cheese and dress with olive oil and a few drops of sweet chilli sauce. Add a good dollop of sour cream and salsa on the side, then a large ladle full of hot chicken/peppers mix on top.
